Serves 5 people, takes about 30-40 minutes

Method

  1. Chop the 3 courgettes.
  2. Fry courgettes in about 4tbsp oil for about 20min, stirring now and then.
  3. Meanwhile, cook the pasta according to packet instructions.
  4. 5 minutes before the pasta is ready, add 1tsp turmeric to the courgettes, and stir well. You may need to reduce the heat and add a little oil, to prevent sticking.
  5. Drain pasta, then mix with the courgettes, and serve.
